AGAIN WE RELY ON CEREAL

OK- So what is the big secret?? Why is it so hard for me to figure this out? I have tried and tried and yet this is what I get...

Why can't I make yummy eggs? Look I even topped them with cheese to make them a little more appealing, but NO, they won't eat them. They will gobble up the eggs that their dad makes, but at the site of mine they cringe and gasp! Even my Hubby dislikes my eggs. In my attempt to be sweet and romantic, I decided for Father's Day last year that I would sneak downstairs and make him breakfast in bed. (secret desire of mine) I swear he heard me crack the egg and came running. He was right there behind me, looking over my shoulder...and cringing. Needless to say he made his own breakfast- sad I know! For the sake of my nasty eggs and the health of my children, please let me know what the secret is. What am I doing wrong!!
My egg recipe: Scrambled (because whenever I try any other kind, they don't turn out so I end up scrambling them. Step 1: Get out pan, spray with Pam so clean up is a breeze. Step 2: Get out bowl, crack eggs, mix with fork. Step 3: Over low heat I add eggs and stir them around with a spatula till they don't look nasty runny anymore. Step 4: Remove from heat and add a bit of salt (no pepper for kids) and if they don't look that great I will top with cheese (Hubby does this and they like it) Hmmmm sounds about right, so what am I missing. Ok and if that isn't enough, challenge me and let's spice up my breakfast life, what other kinds of eggs should I be trying to make. Only one child likes hard boiled eggs, bummer because I can do that! HELP!!!

For each egg that you crack, add 1 tablespoon milk (I use whole milk for the kids, but skim works just fine as well.) Use a whisk to scramble them in the bowl. Poor over medium-low heat. The milk makes the eggs a little less dense.

We have the opposite problem in our house - the kids will eat my eggs, but not my husbands (he doesn't add the milk.)

you need to add MILK! not as much as you would if you were making french toast, but if you add milk it will make your eggs fluffier! (tip coming from her YOUNGER sister folks!) whip them up and then when they're in the pan, keep them moving so no part of them gets cooked more than another...remove from heat when they're as done as you want them (some people like them runnier (eew) and add chees while they're really hot so it melts nicely)
also fried hard eggs aren't hard either (the kind mom's good at making) just crack them into the pan and wait til it gets really white, then flip them, wait til they're done as "hard" as you want them, take 'em off throw some salt on...and serve!

My hubster takes care of the scrambled eggs in my family, too, can't help you.

My kids do like softboiled eggs, though...they dip their toast in the yoke and call them 'soldiers' (some weird English thing).

Well, I am not the best cook in the world, either, so don't feel so bad! When I make scrambled eggs I usually add milk, (I don't know how much, it depends on how many eggs you are making, but just enough to add some white color to the mix, say 2 or 3 tablespoons, or a 1/4 cup?), a dash of salt, and if they like cheese, I add it to the scrambled mixture, not on top. Take one or two pieces of american cheese and break them into small pieces and mix with eggs. Also, I don't cook scrambled eggs on the stove top, I use a microwave dish and nuke them. Usually for three minutes, stir, and an additional two or three minutes. Hope this helps you out!

I am not a good cook either, but I do add milk to my eggs and it does make fluffier eggs. Good luck. Kellan

My hubby always adds a touch of milk to make them fluffier, but I don't. I like them better without the milk. It looks like you might be cooking them too long. I don't know. I'm not real picky about my eggs, and my boys eat anything that isn't nailed down.

As everyone has already told you, milk does make them better. I had to learn that the hard way. ha!

I agree wuth everyone else. Add milk, I have even added water when we are out of milk, it works too. Add the cheese and salt before they are done cooking and stir constanly. Don't cook on to high of heat either.

Like most every one else, I add milk. I also add whatever else I'm going to add, salt, pepper, cheese, etc to the bowl when I whisk the eggs.

Yep... me too... I add milk. I also top with cheese but I add it while still in the skillet, I have no idea if that makes a difference or not, but it's all I got :) Good Luck next time!!!!!

Ok I agree with the milk thing but if you want them really fluffy (and if you don't mind a clogged artery) try adding a bit of cream to the eggs. Also, wisk in a bit of seasoning salt in the bowl.

MILK...does an Egg Good! Thank you everyone, I always added milk when making french toast, I must not be putting enough into my eggs and maybe leaving them on too long. My mom has this phobia of runny eggs, therefore I always think they aren't quite done. Maybe I should get over that and we will all eat happier. Thanks!! Great advice.

Ready.... okay..... first, do not stir in all different directions - stir in the same direction, and ONE DIRECTION ONLY. The more you stir, the more.... well, yucky they get. We do add a tiny bit of milk, but it's not a do or die issue. Pour your eggs into the pan and wait until they are starting to firm up a bit. Simply take take your spatula, and push in one direction. Do NOT STIR. Then, push from the same direction. DO NOT STIR. Think one direction and one direction ONLY.

srambled are the extent of it for me. i use water and mine come out very fluffy. hint don't turn them up too high and keep scrambling!!! hope that helps. we are definitely a cereal and or waffle (pop-up ones!!) kind of house.

Ok, well it looks like you have already gotten lots of advice and I am not reading thru all of them, so just ignore this if someone already said it. Lots of people said milk, which works well, but if you add a small amount of whippping cream (I do this for my children becuase they can use the extra calories) they come out super duper fluffy. Also, it looks like you have your heat on too high. Try turning it down and the eggs won't have that "crunchy" look to them.
